Created by Leah Ferrazzani, these dried pastas are made using the finest Durum wheat Semolina and water found in the US. The preparation process is the same as that used by the finest Italian pasta makers in the world.
Semolina Artisanal Pasta is extruded via bronze dies, giving the pasta a rough texture for better sauce retention. The pasta is slowly dried at a temperature of a 100 degrees. In comparison, commercial pasta is prepared at 180-200 degrees. The difference of a few degrees is huge in terms of the end result.
